Salted Peanut Butter Bites
Prep time: 20 minutes, plus time to chill Cook time: 10minutes Yield: 14 bites (1 per serving)Peanut butter and cacao butter combine in these treats for a creamy texture that’s extra special. The collagen in these makes them a bit of a power treat, and they’re great for kids and adults alike. If you like a little more texture, use crunchy peanut butter instead of creamy!INGREDIENTS: 1/2 cup unsweetened peanut butter or other nut or seed butter 1/4 cup cacao butter, melted2 scoops grass-fed collagen peptides 1/4 teaspoon pure vanilla extract2 pinches of ground cinnamon2 pinches of sea salt10 drops stevia extract2 tablespoons cacao nibsSPECIAL EQUIPMENT:Silicone candy mold with at least 14 (3/4-ounce) cavitiesDIRECTIONS:In a medium-sized mixing bowl, whisk together all the ingredients except the cacao nibs until well-combined. Taste and add more stevia if desired.Pour the mixture evenly into the molds or an ice cube tray and sprinkle with the cacao nibs.Place in the refrigerator until completely chilled and set, about 30 minutes.Release the bites from the molds or ice cube trays by inverting and twisting the tray to pop them out. If they aren’t releasing as expected, set the bottoms of the containers in warm water, then invert the trays to release.Store in an airtight container in the refrigerator or freezer for up to 6 weeks.IN A RUSH?Chill in the freezer for about 10 minutes, until set, rather than in the refrigerator.NOTE: To melt cacao butter, place it in a small saucepan over low heat and stir constantly until it’s fully melted. Alternatively, place it in a microwave-safe bowl and microwave on high in 30-second increments until fully melted.
TIP: It’s fancy, but if you can find coffee salt, it makes a perfect topping for these bites in addition to the cacao bins (as shown in the picture). You could also use mini muffin tin with paper liners instead of silicone molds.
